Wild Dover Sole With Cranberry Almond Couscous

Dover Sole is a mild, flat fish  that has a delicate texture with subtle flavors.  A  3 .5 ounce serving of this delicate fish has only 70 calories, 12.4 grams of protein, and contains no carbohydrates.  Because of its delicate texture, this fish is very quick to prepare.

For this recipe I wanted to add a slight sweetness and citrus flavor. I made a mixture of 1 teaspoon honey, 1 teaspoon fresh grated ginger and 2 teaspoons fresh lemon juice. Mixed this together and spread it over one side of  the fish. I heated 1 tablespoon olive oil with 1 teaspoon unsalted butter. Once the butter melted I seasoned the fish with salt and then spread the ginger, honey and lemon mix over the fish. Placed it in the pan, mixture side down and cooked for 3 minutes. Carefully I turned the fish onto the other side and cooked for an additional 3 minutes. I served this with some delicious couscous and I added some dried cranberries and sliced almonds. I also made some fresh asparagus.

This was such a light, yet delicious meal that I highly recommend.
