Cooking with wine enhances the flavor of the food and brings out the richness of all the flavors. Preparing mussels in white wine is a classic French dish that is very easy to prepare yet so elegant. Ingredients: Serves 1
- 1 pound cleaned mussels
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- salt to season
- 1/8 cup chopped fresh parsley
- 1 small shallot, sliced
- 2 cloves garlic, chopped
- 1/4 cup heavy cream
- 1/4 cup white wine
Preparation:
In a stock pot heat the olive oil. Add the shallot and garlic and cook for about 5 minutes over a medium low heat. Add the butter, cream, white wine and parsley. Stir until the butter melts. Add the mussels and carefully stir. Cover for about 8 minutes until all of the shells have opened. Halfway into the cooking stir the mussels to distribute the sauce. Discard any unopened shells after 8-10 minutes. Serve in a deeper bowl with the sauce and serve with bread slices for dunking into the delicious sauce. Enjoy!
