CLASSIC FRENCH MUSSELS

Cooking with wine enhances the flavor of the food and brings out the richness of all the flavors. Preparing mussels in white wine is a classic French dish that is very easy to prepare yet so elegant. Serve this with some crusty bread for dunking into the delicious sauce, serve with some white wine and enjoy!

Ingredients: Serves 1

  • 1 pound cleaned mussels
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • salt to season
  • 1/8 cup chopped fresh parsley
  • 1 small shallot, sliced
  • 2 cloves garlic, chopped
  • 1/4 cup heavy cream
  • 1/4 cup white wine

Preparation:

In a stock pot heat the olive oil. Add the shallot and garlic and cook for about 5 minutes over a medium low heat. Add the butter, cream, white wine and parsley. Stir until the butter melts. Add the mussels and carefully stir. Cover for about 8 minutes until all of the shells have opened. Halfway into the cooking stir the mussels to distribute the sauce. Discard any unopened shells after 8-10 minutes. Serve in a deeper bowl with the sauce and serve with bread slices for dunking into the delicious sauce. Enjoy!
