It brings me such great satisfaction knowing that the foods I love are so good for me! My love for fish and seafood is a benefit to my health because of all the great nutrients it provides.
We have all heard so much about the benefits fish provides for our health, mainly our cardiovascular system. But did you know that scallops are a very good source of vitamin B-12? This vitamin is needed by our body to convert “homocysteine” which is a chemical that can directly damage blood vessel walls. High levels of homocysteine are associated with increased risk of heart disease, heart attack and stroke. So it’s a good idea to get the proper amount of vitamin B-12 into our system.
In addition to their B12, scallops are a very good source of omega fatty acids and a good source of magnesium and potassium, three other nutrients that provide significant benefits for the cardiovascular system. Omega-3 fats keep your blood flowing smoothly by preventing the formation of blood clots. Magnesium helps out by causing blood vessels to relax, thus helping to lower blood pressure while improving blood flow. Potassium helps to maintain normal blood pressure levels.
So with that said, let’s discuss the great taste!
This meal is so simple yet delicious and gourmet. I wanted to give it a little bit of a salty taste so I wrapped the shrimp and scallops in some prosciutto. This is an Italian ham that has some more fat than an American ham. Many people like to wrap their food in bacon but I chose prosciutto because it still provides that great taste but so much less fat and calories. I served it with some steamed green beans, although you may use what ever vegetable you prefer.
This meal took less than 30 minutes from start of prep to enjoying.

You will need the following for each serving
3 Shrimp
2 large Scallops
2 slices Prosciutto
2 tablespoons unsalted butter
Clean and devein the shrimp. Take the prosciutto and divide the slices in long halfs so you can wrap them around the shrimp and scallops. In a nonstick skillet melt the butter and place the scallops first in the butter since they will take longer to cook than the shrimp. Cook over medium/low heat for about 3 minutes. You will have to turn it over and cook the other side . At this point add the shrimp in the butter sauce. Cook for about 2 minutes and turn over.
You will know they are done when the shrimp turn pink and the scallops no longer have the raw look to them (when they turn white inside and are browned on the outside.
