Mushroom Margherita Pizza
People who know me know that I love going to the farmers market. Today I met some of my friends at the farmers market and as we wandered around I purchased some beautiful vegetables. My favorite purchase was the heirloom tomatoes. Right now there are so many colorful heirloom tomatoes that I couldn’t resist bringing some home.
Heirloom tomatoes are so sweet and not as acidic as regular tomatoes. They are very juicy and full of flavor. They also provide potassium, iron, fiber, many B vitamins and also help reduce certain types of cancers. The lycopene (that which is responsible to providing the rich red or orange color to the tomato) may also lower the risk of coronary artery disease. And when you cook the tomato, the tomato will have two to eight mores times the amount of lycopene than if eaten raw.
I decided to invite my friends over for dinner and make a yummy pizza with the fresh ingredients I purchased at the market. Mushroom Margherita Pizza!! The tomatoes tasted so fresh, the basil so fragrant and the crust was crispy and thin! I have to say, today was a very good day.
