Squid and Shrimp in a lemon/garlic sauce served over linguine

I love seafood! It’s a quick meal that never fails in flavor. Serve the seafood over some linguine in a quick garlic, olive oil and lemon sauce and for some added color add some sweet corn. Enjoy!

Ok, here goes:Pasta for 1, 4 ounces of fresh squid, about 8 large cleaned and peeled but tails on shrimp, 2 tablespoons olive oil, 1 tablespoon unsalted butter, salt and pepper to season, 1/4 cup sweet corn kernels, 2 cloves crushed garlic, 2 teaspoons fresh lemon juice, Bring a pot of water to boil and add the pasta and some salt. Cook according to directions.Cut the squid in about 1/2 pieces, usually will be round pieces. Clean the shrimp.In a skillet heat the oil and melt the butter. Add the squid and shrimp and season with salt and pepper. Cook for about 2 minutes and then turn the shrimp over to cook on other side. Add the lemon juice, garlic and corn and mix through. Cook for about 2- 3 more minutes. Add the pasta to the squid and shrimp and carefully mix through.Serve garnished with Chives.
