1 teaspoon crushed garlic
3 tablespoons fish sauce
3 tablespoons water
2 1/2 tablespoons sugar
3 tablespoons lime juice
3 tablespoons grated ginger
1 teaspoon chopped hot chile
Place all of the ingredients in a small bowl and mix to incorporate. Allow to sit for about 15-30 minutes to allow all of the flavors to come together.
Seared Salmon
1 6 ounce fillet of salmon
2 tablespoons olive oil
salt to season
ginger lime sauce
Season the salmon with salt. Heat the olive oil in a skillet to hot over a medium low heat and add the salmon. Cook for 4 minutes without moving the salmon. This will sear the salmon and allow you to turn it easily onto the other side.
Turn salmon over and cook for 3 minutes. Pour half of the sauce over the fish and cook 1 additional minute.
Remove the salmon onto a plate and pour the rest of the sauce over the salmon.
