- Angel hair pasta for 2
- 2 cloves minced garlic
- 2 tablespoons olive oil plus 1 teaspoon for pasta water
- 8 ounces ground beef
- salt and pepper to season
- 1/2 teaspoon dried oregano
- 1 tablespoon chopped fresh basil and extra for garnish
- 1/2 cup grated parmesan reggiano cheese
- 1 cup tomato sauce
Preparation:
Place a pot of water to boil. Once it comes to a boil, add some salt and 1 teaspoon of olive oil in the water. This will help prevent the pasta from sticking together. Add the pasta and cook according to package directions. I prefer al dente (firm to the taste).
In the meantime, heat the 2 tablespoons olive oil on a medium low heat and when hot add the minced garlic. Cook for only 1 minute so it does not burn. Add the meat and season with the salt, pepper and oregano. Continue cooking until the meat is no longer pink, about 8 minutes. Add the chopped basil and mix through. Add the tomato sauce and heat through. Carefully add the cooked pasta using a set of thongs so this will allow you to add some of the pasta water into the mixture. Gently fold the pasta in with the meat sauce so it coats the pasta. Add the grated cheese into the sauce, reserving some for serving.
Divide into two bowls and garnish with the basil leafs and cheese. Enjoy!
