Sesame Seared Tuna with Oven  Roasted Potatoes , Olives and Tomatoes

  I enjoy sesame seared seafood especially tuna. It creates this crisp, crunchy taste while still  allowing  for a rare cooked  tuna. Pair this with some  oven roasted potatoes, sweet onions and tomatoes and you will be completely satisfied. Not only is this a tasty meal but a healthy one too.
Tuna provides many health benefits. It lowers the risk of stroke, high blood pressure, cardiovascular disease, breast and kidney cancer and it may also reduce symptoms of arthritis.
Ingredients (Serves 1):
  • 1 4 oz fresh Tuna
  • 1 tbs Grape Seed Oil
  • Salt and Pepper to season
  • 2 tbs. Sesame Seeds
  • 2 tbs Olive Oil
  • 1 small Red Potato cubed
  • 1 small White Potato cubed
  • 3 tbs. Black Olives
  • 1/2 cup Grape Tomatoes
  • 2 cloves minced Garlic
  • 1 tbs. chopped fresh Rosemary
  • Olive Oil for drizzling
  • Salt and Pepper to season
Preparation:
Preheat oven to 425 degrees. Cube the potatoes. In a bowl place the cubed potatoes, olives, tomatoes and chopped rosemary. Mix with the olive oil to coat. Season with salt and pepper. Place on a baking sheet sprayed with non stick spray. Bake for 20 minutes. Use the same dish from the potato mixture and place additional few drops of oil. Coat the tuna with the oil. season with salt and pepper. Sprinkle with the sesame seeds on all sides. In a non stick skillet heat until hot. Heat the grape seed oil until very hot and then add the tuna. Allow to sear for 3 minutes. Turn over for 2 additional minutes. Then with tongs turn the tuna to sear all over. A total of 6 minutes from start to finish. This will create a medium rare tuna. Serve with the potatoes
