Lemon Chicken served over Fresh Spinach

What are you making for lunch? How about a quick, easy and healthy meal? 
This is such a flavorful combination and healthy too. Spinach is so full of iron. This leafy green is an excellent source of vitamin K, vitamin A, magnesium, folate, manganese, iron, calcium, vitamin C, vitamin B2, potassium, and vitamin B6. It’s a very good source of protein, phosphorus, vitamin E, zinc, and copper. Plus, it’s a good source of selenium, niacin, and omega-3. Top it off with lean chicken with lemon and you have a healthy meal with all of the guilty pleasures.

Ingredients (Serves 1):
·         1  4-6  ounce chicken breast
·         salt and pepper to taste
·         1 tablespoon olive oil
·         1/2 cup dry white wine,
·         2 tablespoons chopped fresh parsley
·         lemon zest from 1/2 lemon
·         1/2 lemon juice
·         flour for dredging about 1/4 cup
·         4 cups fresh spinach
Preparation:
Take chicken and season with salt and pepper.  Dredge in flour. Set onto a plate. In a skillet heat oil till hot and add chicken. Cook on each side about 4 minutes on medium low heat. Remove the chicken and cover to keep warm. Add the wine to the pan and deglaze by scraping the bottom of the skillet with a wooden spoon. Add the lemon zest, parsley and lemon juice.  Allow the liquid to reduce for about 1 minute. This will release the flavor for the sauce   Add the chicken back in and cover with the spinach and place cover to allow spinach to wilt. Cook for about 2 minutes or until the spinach wilts. Remove and season with salt and pepper again. Plate the lemon chicken with the spinach on top. Pour the sauce over the chicken and spinach.
