Pears, they are such high powered super fruits. They provide so many health benefits that you simply cannot pass by. They prevent high blood pressure, cancer prevention, provide high vitamin C, provide high fiber for prevention of colon cancer, they provide energy, help in relieving high fevers and act as a great immune booster!! Add some honey, a natural sweetener to the chicken and you have such a healthy meal.

Ingredients (Serves 2):
· 4 skinless chicken pieces
· salt and pepper to season
· 1 pear sliced to ¼ inch and seeded
· 1/4 cup pear juice
· 1/4 cup honey
· 2 tablespoons chopped basil
· 1/2 teaspoon grated ginger
· 1/2 cup water
· 1 tablespoon sliced almonds
· 1/2 cup couscous
Preparation:
Chicken:
Preheat oven to 375 degrees. Place the chicken in a shallow baking dish and season with salt and pepper. Slice the pear in half and remove the seeds. Slice one half into ¼” slices. Place the other half in a food processor. Add the pear juice, honey, basil and ginger in the processor. Pulse for about 30 seconds. Pour the mixture over the chicken. Place the sliced pears on top of the chicken. Cover with foil and place in oven for 30 minutes. Remove foil and bake for 15 additional minutes.
Couscous:
Boil 1/2 cup water and add the almonds. When it comes to a boil add the 1/2 cup couscous, stir to mix and turn burner off. Cover and allow the couscous to absorb the liquid for about 5 minutes. Remove cover and fluff with a fork. Serve the chicken with couscous.
