Mussels, Clams and Shrimp in a Tomato Sauce

 
How delicious is this? If you are a seafood lover than this one is for you! This recipe takes no amount of time to prepare and the flavor will make you think you are in a five star restaurant. Serve this with a nice chilled Rose and some great company and it’s an all night party.

Ingredients (Serves 1):
·         3 mussels
·         3 clams
·         3 extra large shrimp
·         1 cup sliced grape tomatoes
·         3 cloves minced garlic
·         1 teaspoon olive oil
·         1 tablespoon chopped parsley
·         1/2 cup white wine
·         salt and pepper
·         pappardelle pasta for one
 
Preparation
Scrub and clean mussels and clams under cold running water, Remove the shell from the shrimp and rinse under cold water. Pat dry. Place salted water in a pot for the pasta. When boiling,  add the pasta. Cook for 6 minutes, drain. In a skillet add the oil and minced garlic.  Sauté  for  1 minute on medium low heat.  Add the tomatoes and cook for 2 minutes. Add the wine and bring to a boil. Add the clams, mussels and shrimp.  Season  with salt and pepper. Cover, lower the heat to medium low and allow for the shells to open, about 8 minutes. Remove any unopened shells. Add the pasta and coat through with the sauce. Top with parsley and serve.
