Take the acorn squash and cut across about 2 inches from the stem and set aside. Level off the opposite end by cutting across the squash being careful not to cut into the inside. This will stabilize the squash on the plate. Carefully cut inside the squash to remove the flesh discarding the seeds. Cut the flesh into cubes. Peel the carrot and cut into 1″ pieces. Chop the onion. In a small stock, melt the butter and add the onion. Saute for about 2 minutes. Add the carrot and squash. Cook for additional 2 minutes. Add the broth and bring to a boil. Cook for 12 minutes or until carrot and squash are fork tender. Turn heat off. Carefully remove the squash and carrots and place in a blender with 1/2 cup of the broth. Blend until smooth. Carefully pour the soup into the empty squash and sprinkle with the nutmeg

Acorn Squash Soup
This soup is so super easy to prepare and packed with color and vitamins. I decided to use the outer shells of the squash for a colorful presentation for a dinner party. You can make this for a first course meal or for the main meal. The combination of the carrots and acorn squash create this beautiful orange, delicious and creamy soup that will have you licking your spoon. The carrots are a great source of beta carotene for eye health and to slow down the aging of cells. They help prevent cancer and heart disease and reduce chances of stroke. The acorn squash, it’s so cute in it’s shape, contains 145% of the daily recommended requirements of vitamin A! It also contains vitamin C, folate, manganese, fiber and potassium. So not only is this soup beautiful but beautiful for your body!

· 1 Acorn Squash
· 1 carrot
· 2 cups Chicken Broth
· Salt and Pepper to taste
· 1 tsp Butter
· 2 red pearl onion chopped
· 1/2 tsp nutmeg
