Wild Seared Salmon with Garlic Mashed Peas

This is one of my favorite salmon meals! It is packed with the creamy mashed sweet tasting peas that look so pretty on the plate. Reminds me of all of the new springtime colors and flowers! 
Did you know that a cup of peas has less than 100 calories and also has lots of protein (great for muscles)? Peas also aid in the anti-aging process, strong immune system and  in the prevention of stomach cancer plus are so creamy and sweet.
The wild salmon is high in omega-3, which is known to support brain function by increasing the memory which aids in the decline  for Alzheimer’s disease. The omega-3 also  helps with eye health. Salmon helps reduce high blood pressure and helps prevent heart disease. The list actually goes on and on for the health benefits of this great combination, but to most it’s the great taste that everyone loves. So Enjoy!
Ingredients (Serves 1):
·         2 tablespoons Olive Oil
·         1  6 ounce salmon fillet
·         Salt and Pepper to season
·         1 cup Peas
·         1 small clove Garlic
·         2 tablespoons Olive Oil
·         2 tablespoons fresh Mint Leaves
·         1/4 cup grated Parmesan Cheese
·         2 tablespoons Lemon Juice
Place peas in a pot with cold water and bring to a boil. Boil for 3 minutes and drain. Set aside. In a skillet heat the oil until hot. Season the salmon with salt and pepper. Place in the skillet and cook for 3 minutes on a medium low heat. Turn salmon over and cook additional 2 minutes. In a food processor place the peas, garlic, olive oil, mint leaves and cheese. Mix until smooth. Place on a plate and top off with the salmon. Drizzle with the lemon juice.
