Farmers Market Ingredients…..
…..To Fabulous, healthy and quick meal! Chicken with Red Kale
I love going to the “Farmers’ Market” to purchase these fresh and organic ingredients for my meals! Right now the tomatoes are so beautiful, full of color and taste amazingly sweet! There is also an abundance of beautiful zucchini.
Tomatoes do not only taste great but they also are great for you. They are full of vitamins A and C (which act as great anti-oxidants), potasium, vitamin B (helps to lower blood pressure) and lycopene (great for your skin).
I also purchased some red and purple potatoes and decided to add some red kale for that added nutritional blast of goodness for your health.
I love Kale, so I eat it as often as possible. It’s so healthy for you. Kale is a great source of vitamin K, (which is great for your bones), vitamin C, vitamin A,(great anti-oxidants). It also aids in the prevention of various cancers, lowers cholesterol. Basically, kale is a “Super-food”!
So if you have a farmers market you can visit, I highly suggest purchasing some of the “in” season vegetables and creating a wonderful, healthy and organic meal! Enjoy!
Chicken with Red Kale
Serves 2:
8 ounces of boneless, skinless chicken breast cut into 1 inch pieces
2 tablespoons olive oil
salt and pepper to season
2 medium cubed potatoes ( I used 1 red and 1 purple)
1/2 cup sliced red onion
1 1/2 cups diced tomatoes
1 cup sliced zucchini
2 cups torn into pieces red kale
Place the cubed potatoes in a pot of cold salted water and bring to a boil. Boil until fork tender, about 12-15 minutes. Drain.
In a skillet, heat the olive oil until hot. Add the salt and pepper seasoned chicken until cooked on all sides, about 8 minutes. Remove from heat.
To the same skillet add the onions and cook for one minute. Now add the zucchini, and tomatoes. Season with some salt and pepper. Cook for about 3 minutes. Add the kale and cook for additional 2 minutes.
Add the chicken and potatoes back into the skillet and heat through for a minute.
Remove and Enjoy!
